"New Orleans Style" means extra finely shaved snow! They call them "Snow Balls" down in the Crescent City. Ice this fine is called shave ice every place else. Serve it in a Sno-Kone cup and call it either a snowball or a Sno-Kone. Serve it in a "Shave Ice" cup illustrated in accessories and you can sell it for at least $1.00 more. Extra fine snow is the main feature of New Orleans Shaved Ice confections.
#1087 New Orleans style "Block Ice" shaver.
The # 1087 is one of our two most powerful ice shavers! The #1087 (as well as the #1047) feature three quarter horsepower heavy duty motors. The extra finely shaved snow comes from a 350 RPM large diameter three blade shaver head plains snow off of a large block of ice and delivers it from the chute at the lower left hand corner of the body into the hand held cup. Again, the # 1008 foot switch may be desirable, but not totally necessary.
To operate, put a 12 to 15 lb. block of ice in the ice block compartment. Tighten the pressure on the block by use of the wheel shown above. There is a "Kill Switch" on the ice block compartment. Therefore, the door to this compartment must be kept closed when you are shaving. The lever to the left-hand side helps the operator apply pressure on the block of ice and forces it gently into the shaving head. As snow is literally planed off of the ice block surface, it is ejected into the cup.
Of course, you may shave into a receiving pan and by use of a snow dipper produce servings of shave ice or snokones, depending upon the container you select. Remember, shave ice sells for $1.00 to $1.50 more than a Sno-Kone or snow ball. So, get the right containers, the right point of purchase material - get the right shaver.
